How to Make Homemade Noodles {Recipe}

  Homemade Noodles ~The very thought of it warms not only your stomach but your heart!

 As I child I remember going over to stay at my Grandmother's house and making noodles with her.
We made them, ate them and were always sent home with some to put in the freezer for later!
I've been making all types of noodles ever since.

Noodles are so easy that a child can help you and so simple that you probably have the ingredients already.

 Today I'm sharing a recipe for Egg Noodles.  This is a rich and savory noodle that I've made especially for soup.

Egg Noodles
{Recipe makes 1 pound}
By hand in a large bowl, cut together with pastry blender or knife.
    1 1/2 cups flour
    1 1/2 Tablespoons butter
    1/8 teaspoon salt
In small bowl beat together
2 large egg yolks and
2 large eggs
Next make a well in the center of your flour mixture and add eggs.
Using a fork continue to mix until the dough sticks together.
Divide into fourths and roll out on a floured board.  {Work with one at a time.}
Stretch dough further with each roll to desired thickness and then cut.

 For the soup I was making I rolled it a bit thicker but remember noodles will "plump up" when cooked!
When I make noodles for soup I like to cut them by hand {like Grandma did} but you can also run them through your pasta machine or cut in any shape.  Usually you would roll them as thin as you can.

Let your noodles sit out to dry for 30 to 60 minutes before cooking.  They can also be dried or frozen to use later!

Be sure to check back to see what's simmering in my pot,
but first tell me...
"What is your fondest NOODLE memory?"  I'd LOVE to hear all about it!
