How to Make Cookie Bars {Recipe}

What is it about Summer and having late night munchies?  It doesn't help when cousins are staying over and you have teenage girls up all night having fun!  So when midnight hits and we all get hungry of course they wanted to make My sister's famous cookie bars.  She's been making them for many years and are everyone's favorite.  The last time I shared a recipe for cookie bars was last Summer with my own creation of Toffee Bars.  Cookie Bars are so simple and quick that it really is the perfect thing for late night baking.  So here is what the girls made.


Kelly's Cookie Bars To Die For!

Recipe ~

48 caramels, individually wrapped (Kraft or Brach)
5 Tablespoons of heavy whipping cream
     -Melt caramels and cream together.

1 1/2 cups flour
1 1/2 cups oatmeal
1/2 teaspoon salt
3/4 teaspoon baking soda
1 1/4 cups butter, softened
1 1/4 cups brown sugar
     -Mix dry ingredients and butter together until crumbly.

Place 1/2 of the mixture in a 9 x 13 pan and press down.  Cover with 7 oz Symphony chocolate bar, broken into small pieces.  Pour melted caramel mixture over chocolate.  Now add the remaining cookie mixture on top.  Finish by baking at 350 degrees fahrenheit for 20 - 25 minutes.  Take out and let cool completely before cutting into squares.  Cover and store them and they are even better the next morning!  Yum!

    1. Thanks Amy! The great thing about this recipe is you can keep the ingredients on hand for nights such as that, even though storms in the desert are kind of rare.
