Lemon Pasta {Recipe}

I simply boiled mini bowtie pasta {linguini would be great as well}...


and added some fresh herbs that I could salvage from the leftovers of my garden,it is Winter now you know!


Here is a recipe for you to follow to Summerize your Winter Dinner!

WENDYS SUMMERY WINTER LEMON PASTA

1 lb. mini bowtie pasta {linguini or any other too}
1/2 cup olive oil
zest from 1 lemon
juice from 2 lemons
1/2 cup green onions
1/4 cup chopped parsley
grated Parmesan cheese {I used 2 cups!}
salt and pepper to taste

Cook pasta in salted boiling water till done then drain.  Combine all ingredients and mix well then pour over pasta.  Enjoy!


This was the perfect accompaniment to serve with my grilled pork chops and green beans!  Check back tomorrow to see what other lemon delight I have to share, as I am using my lemons and sharing recipes all week!  This dish really freshened up my Winter dinner don't you think?
