Raspberry Lemon Bars {Recipe}

What's better than Lemon Bars on a cold Winters Day?  Yes!  Raspberry Lemon Bars!  Yesterday I shared with you my bountiful lemon crop and favorite recipe for Wendys Winter Wonderland Lemon Bars.  So after school my daughter and I tried a new spin on the old recipe using what we had on hand and here is what we came up with.  These beautiful and scrumptious Raspberry Lemon Bars!  If you didn't catch yesterday's recipe please go back here http://wendyshat.blogspot.com/2011/01/lemon-bars-recipe-garden.html and check it out as well.

So this recipe calls for the same ingredients as well {with only two changes}.

RASPBERRY LEMON BARS

1 cup softened butter
1/2 cup powdered sugar
2 cups flour
*****
1 1/2 cups fresh raspberries {addition to lemon recipe}
4 eggs
1 1/2 cups granulated sugar
2 teaspoons finely grated orange peel {instead of lemon found in lemon recipe}
1/2 cup lemon juice
1/4 cup flour
1/2 teaspoon baking powder


Follow the same recipe as in the traditional lemon bars found yesterday http://wendyshat.blogspot.com/2011/01/lemon-bars-recipe-garden.html which has you mix first 3 ingredients and press into pan and bake at 350 F for 20-25 minutes.  Then spread your raspberries on pan and combine the rest of the recipe ingredients and put back in oven to continue baking at 350 degrees F for an additional 25 minutes.  Then remove from oven and cool in pan on wire rack.


Once cooled sprinkle with additional powdered sugar and cut into squares.


I chose to garnish mine with a few fresh raspberries and another tiny sprinkling of powdered sugar!  
Can't you just taste this fruity goodness?
