So this recipe calls for the same ingredients as well {with only two changes}.
RASPBERRY LEMON BARS
1 cup softened butter
1/2 cup powdered sugar
2 cups flour
*****
1 1/2 cups fresh raspberries {addition to lemon recipe}
4 eggs
1 1/2 cups granulated sugar
2 teaspoons finely grated orange peel {instead of lemon found in lemon recipe}
1/2 cup lemon juice
1/4 cup flour
1/2 teaspoon baking powder
Follow the same recipe as in the traditional lemon bars found yesterday http://wendyshat.blogspot.com/2011/01/lemon-bars-recipe-garden.html which has you mix first 3 ingredients and press into pan and bake at 350 F for 20-25 minutes. Then spread your raspberries on pan and combine the rest of the recipe ingredients and put back in oven to continue baking at 350 degrees F for an additional 25 minutes. Then remove from oven and cool in pan on wire rack.
Once cooled sprinkle with additional powdered sugar and cut into squares.
I chose to garnish mine with a few fresh raspberries and another tiny sprinkling of powdered sugar!
Can't you just taste this fruity goodness?
So my bountiful harvest of lemons is certain not to go to waste at my house! Check back tomorrow as I will be sharing lemon recipes all week and you won't want to miss a thing! Tell me...which is your favorite, the original or the raspberry surprise? Wish you could come over to test them both!
