Poppy Seed Bread with a Lemon Glaze {Recipes}

My Winter Lemon Harvest 2011 has brought sunshine yet again to my home this morning by way of a cheerful Poppy Seed Bread with a Lemon Glaze!  Yum what a treat for my breakfast table! POPPY SEED BREAD with a Lemon Glaze

1 1/4 cups milk
1/3 cup oil
1 egg
1 teaspoon rum flavoring
2 1/2 cups flour
1 cup sugar
1/4 cup poppy seeds
3 teaspoons baking powder
1 teaspoon salt

1 cup powdered sugar
2 Tablespoons lemon juice

Preheat your oven to 350 degrees F.


Start by mixing milk, oil, egg, and rum flavoring together.  In a separate bowl combine flour, sugar, poppy seeds, baking powder, and salt.  Add liquid and dry ingredients together next.


Then grease bottom only of large bread pan or 2 small bread pans and pour mixture into pan and bake for 50 to 60 minutes.


Then mix together powdered sugar and lemon juice to make your glaze.


 When finished remove from oven, loosen sides of bread from pan and remove.



While bread is still warm, drizzle glaze over your poppy seed loaf.  I like mine a bit thicker so I let the bread cool for a bit first.  Wow!  Doesn't that dripping glaze just make your mouth water?!  All you have to do is serve it up with your favorite hot drink and you have the perfect treat for a Winter Breakfast Delight!  I heard no complaints this morning!  Hope you enjoyed my lemony goodness this week and that it brought a bit of sunshine to your dreary Winter!  I won't bug with you with more of my lemon zanyness, but in trying to use up my bounty I now have a stack of recipes from my files I am dying to try again!

  3. Wendy, my boys go NUTS over poppy seed bread and muffins! I think they would probably FAINT if I made this for them! And after that of course, the whole loaf would be fought over and gone at lightning speed! LOL!
