Old Fashioned Cupcakes {Recipe}

Sometimes you must indulge your Inner Princess and drop everything, 
just to make Old Fashioned Cupcakes {with Strawberry Icing of course}!

Been way too busy with life lately, have messy house, should be thinking about making dinner.  
Nah we're making cupcakes instead!  
It's the best thing to do on a cold and stormy Saturday!

Just got the latest edition of "Where Women Cook" {you can check out the latest edition here http://www.stampington.com/wherewomencook/  or find out more about their website here  http://wherewomencook.com/about/ } My daughter was inspired to make cupcakes so we did!  Loved the article telling us all about an inspiring woman named Cheryl Day, and her incredible bakery called Back in The Day Bakery, located in Savannah, Georgia.  Sure wish it was around the corner from me!  {Well maybe that's a good thing it's not!}  She is coming out with a cookbook soon and I can't wait!

Got out the mixer and whipped up the cupcake batter!

Old-Fashioned Cupcakes  {Cheryl's recipe}
{Makes 2 dozen cupcakes}

1 3/4 cups cake flour (not self-rising)
1 1/4 cups unbleached all-purpose flour
2 cups sugar
1 Tablespoon baking powder
3/4 teaspoon salt
1 cup (2 sticks) unsalted butter, at room temperature,
                         cut into cubes
4 large eggs, at room temperature
1 cup whole milk
1 teaspoon pure vanilla extract

1.  Preheat oven to 325 degrees.  Line cupcake pan with liners.

2.  Add flours, sugar, baking powder, and salt in large mixing bowl.  Mix on low for 3 minutes until well combined.

3. Add butter and continue mixing on low speed until well combined.

4.  Add eggs one at a time, mixing on medium speed after each addition, until combined.

5.  Slowly add milk and vanilla to batter and continue mixing, scraping down the bowl, until thoroughly combined.

6.  Scoop batter into baking cups, filling each about two-thirds full.  Bake for 17-20 minutes, or until a toothpick comes out clean.

7.  Cool and decorate as desired.

Thanks to a delicious fresh Strawberry Frosting that my daughter made up! She took Cheryl's basic Vanilla Buttercream Frosting and changed it up.  We wanted fresh fruit and a much thinner consistency so as to taste similar to the strawberry cake my grandma used to make.

Wendys Hat Strawberry Icing

1 cup (2 sticks) unsalted butter, at room temperature
8 cups powdered sugar
1/2 cup whole milk
2 teaspoons pure vanilla extract
5  fresh strawberries (4 of them pureed and 1 berry smashed to add bits to the frosting texture)

First cream butter until fluffy.  Then add half of the sugar, milk, vanilla, and mix until smooth.  Add the strawberries and then gradually add the rest of the sugar.  Whip together and frost your cupcakes.

Of course my daughter had to smother her cupcake with Nutella and fresh raspberries!

I will have to tell you that mine did turn out fabulous!  
The first bite brought back memories of my Grandma Zora and her famous Strawberry Cake.  
I'm digging that recipe out!  
Yes you will love the incredible taste of Cheryl's Old-Fashioned Cupcakes.  
They are fabulous and would taste great with any type of frosting on them {or none at all}!
