Chicken Salad Sandwich {Recipe}

What do you get when you mix something smoked from your local grocer and something baked from you local bakery, and a local delicacy to mix them all up with, along with some fresh herbs and lettuce from your garden?  Country Chicken Salad Sandwich done in perfect WendysHat style of course!


It all started last year with a trip to my local Whole Foods Market, where I love to find fresh and local food.  I took one of their famous freshly smoked chicken breast and chopped it into tiny pieces {along with fresh basil from my garden}.


I'm not a fan of traditional Chicken Salad where the chicken comes from a can and it is smothered in Mayo.  I do use about a Tablespoon of the Fresh Garlic Mayonnaise with my fresh chopped chicken.  I purchase this from Whole Foods and it is mayonnaise that is made locally as well!  {She has many flavors!} You can check out her Strawberry Creek website if you're not in Vegas, and order online.



Then I took two slices of my favorite bread from local Granello Bakery {also sold at my local Whole Foods}.  So fresh.   I especially love the  Country Potato Rosemary Bread for this particular sandwich!  It adds so much flavor.  Check out Granello Bakery for their incredible Country Breads and other treats!


I start with layering fresh lettuce from my garden {there is nothing better than that}!


Next I place the chicken mixture on top of my lettuce...


and add some chopped onions on top of that...


and I can't forget to grind fresh sea salt and pepper to the mix!


Top it off with another slice of that rustic but heavenly bread and you have a great meal! {perfect for a picnic}
I paired my sandwich with a parmesan cheese crisp and fresh grapes {also from my local market} and I am in heaven!  Funny because I am not a sandwich type but this is one creation that my daughter came up with, that I do love!



 Speaking of incredible rustic breads... last week while in LA I stopped at the Farmers Market and found this wonderful Raisin, Walnut, Carrot Bread!  So soft and moist and flavorful!  I just love using different breads for everyday cooking/eating.

Back to my sandwich...   It's something about using fresh local ingredients that makes all the difference!  Fresh smoked chicken, homemade flavored mayonnaise, fresh but rustic flavored bread, fresh herbs and lettuce from the garden!   So tell me...   1. I am a big time sandwich lover! But I'm very picky about my sandwiches! I have all kinds of diverse favorites - from peanut butter and banana on crunchy organic wheat bread, to turkey, cheese and cucumber w/ horseradish mustard! I even make a soft boiled egg w/ fresh ground sea salt & pepper sandwich - and that garlic mayonnaise sounds amazing!
