Apricot Crisp {Recipe}


Today is the first day of Summer!  Fresh Summer fruit is something I look forward to every year.  There is truly nothing better {or sweeter} than a fruit or vegetable picked and immediately eaten!  This morning I had the pleasure of doing just that!  I had a bounty of apricots this year and decided to make a treat with some of them.


APRICOT CRISP {WendysHat Style}

20 apricots
2/3 cups packed brown sugar
1/2 cup flour
1/2 cup oats
 1/3 cup finely chopped walnuts or pecans
3/4 teaspoon cinnamon
3/4 teaspoon nutmeg
1/2 cup butter - softened


 Heat oven to 375.  Arrange apricots in greased pan. {8 x 8 square or 9 inch pie pan}
Mix together remaining ingredients and sprinkle over apricots.
Bake until topping is golden brown and fruit is tender. {about 30 minutes}

Serve warm and top with whip cream or ice cream if you want.  Mine was melt-in-your-mouth delicious!

Apricots on my tree


My dwarf apricot tree {notice I left some on for the birds} after I took my protective netting off and picked the apricots!  I ended up picking at least 100 of these delectable little gems and they were as sweet as candy!

 So juicy!

I will definitely be enjoying this first day of Summer!  Warm weather and fresh fruit make for a perfect day!  Apricots and the warm Summer air have inspired me today.  May you take a moment to enjoy your first day of Summer as well!  What has inspired you this Summer?

  3. I just can't imagine apricots growing right in your yard! I feel the same way about people in Florida who pluck oranges from their tree for breakfast. Lovely photos, as always, Wendy!

  10. YUM!!! Your apricots look sooo lovely and your crisp looks super delish! Great pics too - as usual! I forget how much I love apricots - we had an amazing tree at our last house that I really miss! How small/large is your dwarf tree? You got a LOT of apricots - how awesome is that! And will you leave the netting off now that you've picked your first bunch of yummy apricots? Enquiring minds want to know, hehe :D
