How to Make Crepes {Recipe}

Everyone loves a really great crepe!  I can still taste the perfect crepe, that I had the pleasure of eating, on my first trip to Paris France.  Fresh and warm right from the street vendor to my lips!  Mmm... melt in your mouth heavenly goodness. It was simply brushed with butter and sprinkled with sugar.  I've had many good crepes since then but never quite the same.

I have a daughter that is obsessed with perfect crepes too, loves to cook and create in the kitchen, and started her second year of learning to speak French just this week {after three years of German}.  She knows a lot more than me about France!  She has tried many crepe recipes this past year and finally found the perfect one in a magazine that I had laying around.  Lucky for me again... she wanted to make them for her visiting cousin!


In the premiere issue of Where Women Cook there is an article where a very creative girl named Elizabeth Maxson from the blog The Adventures of Elizabeth , where she shares her favorite crepe recipe!  This has turned out to be our favorite crepe recipe ever!  This recipe alone is worth the cost of the magazine. So check it out if you want to read more details on it.  Yes it's the same edition that had the fabulous Old Fashioned Cupcakes recipe that we made.


Simply mix up the crepe batter and then refrigerate it for an hour {important step}.

Crepes

1 cup flour
1 Tablespoon sugar
1/4 teaspoon salt
3 eggs
2 cups milk
1 Tablespoon vanilla
2 Tablespoon melted butter



Heat your crepe pan between medium and high heat.  Then using a 1/3 cup measuring cup {which has worked well for us} scoop batter and pour into crepe pan.  Quickly swirl pan around to spread batter and cover the whole bottom of the pan {quickly is key word here}.



Gently loosen edges and flip quick!   Practice makes perfect in this step.  Don't worry here it's all in good fun!



 A few seconds on the other side and it's out of the pan and onto your plate!



 You can place them on a paper towel and cover with foil while you cook the others.  Then on to the fun part... filling them and eating your creation!


Nutella and strawberries is my daughters favorite!  Chocolate is great as well!  If you don't want too much filling then just put it on half and then...



Fold over and sprinkle with some powdered sugar and enjoy!


The next delicious crepe creation was covered with fresh whip cream and topped with fresh apricots from our Farmers Market this week. Yum!  We simply sprinkled a dash of cinnamon and nutmeg over it and...


Topped off with a dolop of that fresh whip cream  and another sprinkle of sugar and spice and everything nice, and that's what a perfect crepe is made of!  So tell me... have you ever had the perfect crepe?  If so, what was on it?  If not, when are you trying one?

  10. Hehehe - I just KNEW Nutella was going to show up somewhere in this post! LOL! Wow, those look amazing and your girl looks like a real expert! I haven't made crepes for years but my fave is a vendor that makes them every Saturday up in Cambria. I get one with savory things first - like cheese, avocado, veggies, etc - and then get one with sweet things for dessert - like fruit & chocolate syrup. YUM!
