Sharing my Scrumptious Sweet Treat with you today!
We were craving a late night snack and this is what we came up with, from things found in my cupboard.
What we are now calling Toffee Bars!
RECIPE-
TOFFEE BARS
2 cups flour
1 cup packed brown sugar
1/2 cup cold butter
1 cup pecan halves
1 cup butterscotch chips
Combine flour and brown sugar in large bowl. Using a fork, cut in butter until fine crumbs form. Press mixture into bottom of ungreased 13x9x2-inch baking pan. Sprinkle pecans over crust. Prepare Toffee Topping now and then drizzle evenly over crust and pecan mixture. Bake for 20-22 minutes at 350 degrees F, until topping is bubbly and golden. Remove from oven and immediately sprinkle butterscotch chips evenly over the top, press gently into hot mixture. Cool completely in the pan and then cut into bars.
TOFFEE TOPPING
2/3 cups butter
1/3 cup packed brown sugar
Combine in small saucepan, cook over medium heat, stirring constantly, until it comes to a boil. Then boil and stir for 30 seconds, remove and use immediately.
You will notice how the butterscotch chips get just hot enough to stick into the bars without melting them.
Easy, simple, and scrumptious, if I don't say so myself! But wait!
Just when I thought it couldn't get any better...it did!
By adding a simple scoop of vanilla ice cream and...
drizzling some delectable butterscotch or caramel topping on it...
we now had the perfect Toffee Bar Sundae, that hit the spot just right!
Finally that "Sweet Tooth" late night craving has passed, for now, and we can get back to reality!
