Easy Pasta Salad {Recipe}


SO school started this week and not only me, but the weather doesn't want to get rid of Summer yet either.  Staying busy with my daughter, who is starting her senior year of High School, I found dinner time getting here a lot sooner than I had planned.  Being in the desert it is still 105 degrees out and I don't feel like having anything roasting in the oven all day.  A favorite meal for dinner when it's hot is a Cold Salad.  The other great thing about a salad is that it can be made the night before so it's always ready for dinner when you are.  Perfect!  I throw some salmon on the grill, for those at my house who want something more, and my kitchen still stays nice and cool.  today I'm sharing with you a quick and easy salad that I threw together last night that was just the perfect thing for dinner when that time came way too quick again tonight. 

RECIPE~

Cook (just a moment past Al dente), drain and cool your pasta, then put in a large bowl.
(I used 2 large bags of pasta because I wanted enough for lunches the next day!)
Any pasta will do but I used a spiral multi-flavored/colored pasta because it's adds a lot.

Then add~
(Amounts will depend on how much you are making and how many you are serving.)
2 cups small cherry or grape tomatoes (or dice a larger tomato if that's what you have)
1 large can of whole pitted black olives (slice them if you want smaller pieces)
1 bunch or long green onions, sliced
1 large green bell pepper, chopped
1 large red sweet pepper, chopped

Toss together with a bottle of your favorite light Italian dressing.
(My favorite to make is the Good Seasonings Classic Italian that you make yourself.)
Cover and chill until ready to serve.
