Poppyseed Muffins done Wendys Hat Style!
Spring is here and I am sharing my famous muffin recipe! This is the perfect thing to bring to any Spring Brunch! I've been making these for 25 years so the recipe is tried and true. These muffins have been shared and loved by all!
They key ingredient to this recipe is fresh orange zest in the batter and fresh orange juice in the glaze
BANANA POPPY SEED MUFFINS
2 mashed bananas {I use large ripe ones}
1 egg
1/4 cup vegetable oil
1 Tablespoon orange zest {fresh grated orange peel}
{I use about 3 small oranges for zesting and juicing}
3/4 cup sugar
Mix the above ingredients in a large bowl then add...
1 1/2 Tablespoons poppy seeds
1/2 teaspoon salt
2 teaspoons baking powder
Mix these ingredients in the same bowl as previous ingredients, stir and then add...
2 cups flour and mix well.
Batter will be thick.
I then spray mini muffin tins with Pam and fill them a little over half way. This recipe makes about 3 1/2 dozen plump mini muffins or 1 dozen regular size muffins.
Bake muffins in a 375 degree F oven for about 12 - 15 minutes {for mini muffins} or 20 minutes {for regular sized muffins}. I have to tell you that the mini muffins are better because you get more delicious glaze with every bite!
After these plump little cuties are baked I place them on a wire rack to cool a minute while I mix up my delicious glaze!
ORANGE JUICE GLAZE
In a small bowl I mix...
1/3 cup orange juice {fresh}
1 teaspoon vanilla
1 Tablespoon orange zest {fresh grated orange peel}
1 1/2 cups powdered sugar
Take muffin and dunk it up side down into your glaze.
Right about now is when you will be tempted to just pop it into your mouth! But wait!
Place it back onto the wire rack. {Great tip} Place a sheet of wax paper underneath your wire rack for easy clean up! I now wait about 5 or 10 minutes, then I add another 1/3 cup {or so} of powdered sugar to the glaze and then...
Dunk your little delectable muffins one more time into the thicker glaze. This time I roll them around so the bottoms get covered as well, and place back onto the wire rack for about 10 minutes until they dry a bit. {If I am taking them somewhere and worried about them being too sticky I won't glaze the bottoms.}
The glaze is now thick and hardened. Just look at how tempting they are!
Place them on the cutest platter you can find and there you have it! Poppy Seed Muffins done Wendys Hat style!
