Chocolate Brownies {Recipe}

Who doesn't love chocolate brownies? So last night after coming home from my dinner date {and having two other desserts already} I couldn't pass up yet another treat by my daughter!


The recipe she found {after going through MANY that I had around} was for one which is cake like, which is great since I tend to make thick and gooey brownies.  So I am sharing it with you today!

 SMOOTH CHOCOLATE BROWNIES

2 eggs
1 cup brown sugar
1/2 teaspoon vanilla
3/4 cup butter
6 Tablespoons unsweetened cocoa powder
1/2 cup self-rising flour
1 cup chopped pecans {or walnuts}

1.  Mix the melted butter and cocoa in a bowl.  Set aside.
2.  In another bowl beat together eggs, sugar, and vanilla. 
3.  Now mix in cocoa mixture.
4.  Stir in nuts.
5.  Sift flour over mixture and then fold in.
6.  Pour into greased 8 inch cake pan.
7.  Bake for 25 - 30 minutes in 350 degree F. oven {until risen}
8.  Let sit to cool as it will continue cook during cooling.





Now for the BEST part!  The creamy chocolate frosting.  My daughter found this recipe somewhere and I really love it!  I love it so much I would use it on my brownies and other things!

CREAMY CHOCOLATE FROSTING

4 ounces Semisweet Chocolate Chips
2 Tablespoons Butter
1 Tablespoon Sour Cream

To make the frosting simply melt the chocolate chips and butter in a pan {low heat.  Mix well until smooth and then remove from heat.  Now add the sour cream and beat until smooth and glossy.  Let it cool slightly and then pour it on top of the brownies.  Spread well!


Simply pair it with a glass of milk {for most people} or my favorite delicious cranberry juice!


Yum!  Tomorrow is the last day of school for my daughter!  Yahoo!  That is the official start of Summer around here and that means time for more adventures in the kitchen!  What treats having you been cooking up lately?

    Hmmm... I have a pumpkin bread recipe that's to DIE for, and I have really been craving it lately... perhaps that's next for me! :)
